Is it really May?!?

Is it really already the end of May!! Where has the time gone. I can't believe it has been 2 months since my last blog post too. Whoops! I guess life got in the way. My mom and her husband John came and spent Semana Santa with us here in La Ceiba and we took a killer trip to Roatan for a few nights. The white sand beaches, the tropical drinks, and scuba diving with sea turtles were just a few of the highlights. The rest of the time we hung out in La Ceiba and enjoyed the rivers and beaches here in town. It was so nice to be able to have both of them come and see where we have been living for the past two years! (I still cant' believe it's been that long!)

The weekend after they left we celebrated Easter. Ken and I of course kept the easter egg dying tradition alive. We also hosted an Easter brunch at our house for all of our friends here. Everything was delicious!

Almond Butter Coffee Cake = Heaven!

Big Kid Easter Baskets :) - We're never too old for these!

A few weeks after that Ken and I took a quick trip to Utila to get our Advanced Open Water certification for scuba diving. It was fantastic and we are so happy we decided to do it. We were on the fence about it for a long time because it was another weekend away (darn!) but also that meant spending money on hotel, food, and of course the course. Overall though we did it on a budget (luckily that is what Utila is...a budget island...) and had 7 great dives in 3 days! We completed a wreck dive that took us down to 100 feet and we got to swim through the captain's quarters. We also worked on our natural buoyancy under water. Then we completed a deep dive that took us down to 110 feet where we learned about the affects of nitrogen narcosis (nitrogen builds up in your system making you feel drunk) and it makes your reaction time slower. We did a mind puzzle down there and played with the yolk of an egg since it floated in front of us. We also drank some apple juice! The pressure kept the juice inside the can...it was awesome! On another dive we worked on our navigation skills and we ended our certification course with a night dive...freaky and fantastic. We didn't see anything to crazy like octopus or sharks but we did see some giant lobsters, shrimp, conch, and many sleeping fish. On our two fun dives the next morning we were lucky enough to sea a huge morray eel and a giant sea turtle. Ken got to see a HUGE sting ray in the distance but I didn't look fast enough. We feel so much more comfortable underwater now and it is more of a relaxing sensation since we aren't worried about using up our air quickly or not being able to float. I can't wait to dive in the next place we go to on vacation!

The weekend after that we celebrated with Cary at her baby Shower. (She actually just had her son Owen last Wednesday, May 18!!). We made a six layer cake that had different shades of blue...thanks pinterest! Here's what we did..

Voila!!!

The Party Planners!

Then last week, Ken and I packed up our house and shipped most of our things back to the states. It was a LOOONNNNGGG weekend but it feels great to say I don't have to worry about it anymore. I know that when we get back in the states our things will be arriving shortly and we can also enjoy our last month without having to pack. The moving truck came last Monday to get our things however the movers didn't arrive until 2 hours later...I'm not sure why the truck would arrive without the movers...that's just the joys of Honduras I guess. It has been interesting living though without our things...mainly our kitchen items. We have had to get creative with our meals since we only have one pot, one pan, one skillet, 2 bowls, some silverware, and a few plates. Hmmm...I wonder what we will think up for dinner tonight.

We also celebrated Mother's Day at school last Friday with a show. The even grades came up with performances in tribute to their moms. We sang a fun song called "The Mom Song" and had a picture slide show accompany. Take a look here to see it!

We were lucky to have a 3 day weekend this past weekend so we used our time wisely..by having bachelor/bachelorette get together for our friends Jenna and Elio. The girls enjoyed massages and movies in the afternoon while the boys went paint-balling. Then we got all dolled up (wigs and all) and had a night out on the town (separately of course!). What a fun time!!!

LOVE

We are in our last week of school now and half days begin on Wednesday. Their official last day is next Tuesday with an awards ceremony however grades are due tomorrow so we will just be cleaning and tying up odds and ends. It has been another successful year and Ken and I are anxious to get back home to see everyone. We will be there in only 4 weeks...that is after we take our week long trip to Nicaragua with our friends Jesse and Jessie and their son Tristan. I can't wait!! Happy Monday!
